Because each honeycombed, bark-colored cap serves as ideal camouflage against the forest floor, they're the trickiest mushrooms to track down, and often the most expensive. Mikuni Wild Harvest's network of eco-conscious foragers practice sustainable methods, sourcing these fresh morels from Oregon, Washington State and beautiful British Columbia, where they develop a deep woodsy, nutty flavor reflective of the earth.

The location of a morel patch is a closely guarded foragers' secret; as Hank Shaw tells us, "To be a mushroom hunter is to be the Indiana Jones of foragers. You must be part scholar and part adventurer, willing to head far off the trail and brave real dangers to return with riches. And there is something else, something mystical—every mushroom hunter tells the same story, a variation of my magical moment with the morels."  Luckily for us, this magic extends beyond the thrill of the hunt into the kitchen. Morels have a wonderful affinity for cream and butter, and simple treatments let their flavor shine. We love them simply sautéed with a knob of butter, a clove of garlic and a few sprigs of thyme, buried like treasures in a buttery risotto.

Use and Care

  • Arrives raw
  • Store mushrooms in the refrigerator in the packaging they arrive in
  • Keep the mushrooms dry until ready to use
  • To clean the morels, slice the mushrooms in half and dunk repeatedly in cold water
  • Lay cleaned mushrooms in a single layer on paper towels to dry
  • Mushrooms will last in the refrigerator up to 1 week before they begin to dry out
  • Do not eat raw morels
