Salt of the Earth
After spending more than 30 years foraging herbs and mushrooms in the wild, Connie Green knows every nuance of flavor and texture. So when she created a salt blend with her hand-harvested fennel, with its bright, anise-like flavor, she knew only the best sea salt would do. "It couldn't be too coarse for a finishing salt," she says, "because it would distract from the food." Green finally found that sea salt, and the result is a fennel salt that, sprinkled lightly on fish or or mixed into a batch of biscotti, lifts the flavor. The same salt is the base for the porcini blend, which lends an earthy touch to stews and heartier dishes.
