“Wild things come in bountiful stretches,” says Connie Green, founder of the Napa-based Wine Forest Wild Foods and a pioneer in the business since 1979. She transforms them into foods people can enjoy year-round.
Spring Harvest
In some parts of the United States—the Midwest, Pacific Northwest, and Appalachia, for instance—the location of a morel patch is a closely guarded family secret, one handed down from generation to generation. A true symbol of renewal and growth (they often pop up after forest fires), morels begin appearing in April, and, in the Rockies, continue on into August. Morels have a wonderful affinity for cream and butter, and simple treatments let their flavor shine. Reconstitute Wine Forest’s dried morels by soaking them for just 15 minutes in water or broth. Sauté them in butter, add a little cream, and serve them over thick pieces of hot toast.
