Necessity (and, of course, spin-doctoring) being the mother of invention, some two centuries ago, wine merchants in Orlèans, a northeastern commercial hub along the trading route of the Loire River often found themselves with wine that had turned sour (vin aigre) during its transit. Rather than let the product go to waste, they cleverly declared it a delicacy and created a demand. While wine vinegar had been wild-fermented since the Babylonians, the fermentation technique employed in Orlèans uniquely introduced a “mother” (cultured) bacteria to wine in oak casks. The “mother” (like a sourdough starter) is cultured over time, adding a bit of one batch to the next, preserving the lineage. Sparrow Lane’s vinegar “mother” is over 100 years old…and counting.
