Laura O’Brien worked for David Bouley at his legendary New York restaurant before launching her own line of French preserves. She makes all-natural pectin from a 100-year-old apple tree, and packs about two pounds of sustainably-harvested fruit—sweetened only with ingredients like lemon and sugar, into each jar.
