From only Duroc and Berkshire breeds, this is one of the richest, most flavorful cuts of pork we’ve ever had. And, it comes from one of our favorite butchers, Bryan Flannery. This cut comes from the rib end of the pork loin and Flannery removes the outer layer to get just the cap. Rub it down with your favorite seasonings and put it on the grill for 30-40 minutes or roast it in a 350 degree oven for 30 minutes—we promise, it'll knock your socks off.

Bryan Flannery, Jr. has been immersed in the meat business since sweeping the floors of his dad's famous butcher shop. Today, Bryan sells natural and sustainably raised meats in his own shop, Bryan's Fine Foods, under the watchful eye of the store's manager, his daughter Katie.
