Cortese 101: Predominately grown in the Piedmont region of Italy, Cortese is a white grape with a long history; it’s been documented in Piedmontese plantings as far back as the 1600s. When produced in the town of Gavi, the grape is often called Cortese di Gavi and the resulting wine is called Gavi di Gavi. The family-run Villa Sparina heavily focuses their production on this grape which boasts a moderate acidity and delicate, flinty, herbal flavor.

Nose, palate and pairing:

Gavi di Gavi 2011: With a nod from Ina Garten for it’s full-bodied, smooth texture, this value-oriented white packs a one-two punch. If you love Pinot Grigio but want to further explore Italian white wines, this is a terrific starting point. Layers of white florals and peaches on the nose and a palate packed with pear, lemon, peach and stone. Great with simple classics like roasted chicken, pork tenderloin or seared salmon filets.

Gavi di Gavi Monterotondo 2008: With less than 500 cases produced each year, this cru is more full-bodied and complex than most Gavis. Aromas of ripe pear, citrus and spice are balanced with honey, apple and butter on the full-bodied palate. It’s fresh and impressive. We drink this with a filet of fish, seared or steamed and topped with butter and fresh herbs.

Brut NV: We love this wine both as an aperitif and with an elegant meal. Fresh floral aromas and toasted bread on the nose. Small persistent bubbles enliven the delicate, crisp palate.

This family owned estate put Gavi back on the map after a rigorous overhaul which involved drastically reducing their yields, hiring Piemonte specialist Beppe Caviola as consulting oenologist and renovating their cellar. Today they are recognized as the preeminent Gavi producer with a stunning hotel and restaurant.
