Why to buy: Made in the same fashion as Champagne (but minus the bubbles) this “Blanc de Noir” comes from 100% Pinot Noir grapes that are immediately pressed right after picking. There are only 330 cases of this smooth, mouth filling wine (that’s just-right for grilled fish or shellfish) so swipe it while you can.
Nose, palate and pairing:The aromatics of this wine are fruity with tropical notes of pineapple, passion fruit and mango. It’s loaded with white fruit on the palate and we love it with a pot of garlicky mussels or shrimp off the BBQ. It’s also a great match for cuisines with serious spice like Indian or Szechuan.
Backstory:Why call it Ghost Hill Cellars? In the midst of the 1860s gold rush, a miner traveling to Portland camped for the night on a hill located on what is now the Bayliss family farm. While fast asleep, someone crept into his camp, killed him and his horse and stole his gold. His ghost has wandered the hill ever since in search of his hard-earned gold.
