Roe-mance
Lovers of deliciously salty little globes of mullet roe usually turn to Italian bottarga and Japanese karasumi for their fix. Yet much of the roe actually originates in Florida, where fishermen harvest and ship it. Anna Maria Fish Company founder Seth Cripe decided to keep the local catch at home, employing traditional methods to create what many chefs consider a superior bottarga. We love it shaved on pasta instead of cheese, or crowning a blini with crème fraîche and smoked trout, but it's just as good on its own, a wee slice on a thin rice cracker.
