A Baker’s Life
How is baking like surfing? Robertson gets to the bottom of this, showing us how both of his passions rely on (and change with) the weather, the mood, and the place. When it comes to bread, Robertson allows his bread plenty of time to rise, and lets it develop a complex flavor, bakes it long in a hot oven for a deeply colored crust, and ends up with loaves of bread that have real character and always reflect the place that they were made.
