The beautiful cookbook from one of the best restaurants in the world reads like Danish chef René Redzepi’s high brow diary, and offers an inside look at the culture and philosophy of his Copenhagen restaurant. Each one of Redzepi’s hyper-seasonal Danish dishes is a great adventure: from beetroot granita with woodruff mouuse; to lingonberries with hay cream; and chicken skin with ryebread smoked cheese and lumpfish roe. We admit, we don’t actually cook from this cookbook very often, but we do love to flip through and read Redzepi’s essays, and we’re in love with Ditte Isager’s stunning photography, which include frozen Scandinavian landscapes, stunning portraits of Danish food producers and ingredients, and Redzepi’s intricately composed restaurant dishes, each more colorful and exciting than the last.
