We’ve long been fans of Mourad Lahlou’s San Francisco gem, Aziza. In his first cookbook, he offers us the recipes and stories behind his smart, soulful approach to Moroccan cuisine. The dishes are colorful, beautiful, well-balanced and carefully explained (and Lahlou’s tips for seasoning a tagine and building a perfect spice blend are brilliant). Even a dish as familiar as merguez appears new and exciting when Lahlou is praising it (his method for the traditional lamb sausage includes pork fat and lamb fatback). In short, we can’t say enough good things about this one.

Casablanca

During Mourad Lahlou’s life in Morocco, he never cooked! Born in Casablanca, raised in Marrakesh, he eventually came to the Unites States to study economics and it was here, funnily enough, that he became a chef. Homesick, he began to experiment with recreating the flavors of his mother’s kitchen on his own, using only his memories. The result? Super personal dishes rooted in Morocco, but thriving in Northern California. Unbelievably delicious.
