An apprenticeship with pastry chefs in Milan and Turin brought Gary Rulli back to his hometown of San Francisco with his heart set on creating a true Northern Italian pastry caffé. With his wife Jeannie, Gary opened Emporio Rulli in 1988. Together with Turin-based chocolate master Fabrizio Galla, Gary launched Galla Rulli, a pastry line exclusive to Gilt Taste.

Edible History
Pastry chef Gary Rulli makes his panettone from a centuries-old recipe passed down from Milanese panettone maestri to their apprentices over the generations. This time-honored method involves a 30-hour leavening process using a natural yeast starter. Made without preservatives, this panettone should be eaten with two weeks of purchase. We doubt you’ll have any leftovers, but if you do, it makes a wonderful budino di panettone (bread pudding) or French toast.
