A Mere Truffle

The size of tuber magnatum pico can vary from that of a pea to that of a grapefruit, and its shape is more or less round or oval. The skin ranges from pale to yellowish, smooth to cracked. Its flesh might be gray-white, beige, or light brown with a touch of ocher. No matter its color and texture, it is the definition of a luxury, with that heady aroma and infinite flexibility with French and Italian dishes. Pair it with butter and pasta, potatoes or risotto, crostini or cauliflower, Parmesan or Grana Padano. And don’t forget another crown jewel of Piedmont, Italy—Barolo.

Use and Care

  • White truffles should not be cooked, but should be eaten raw. Use within five days of receipt.
  • Gently wrap the truffle in absorbent paper (such as a paper towel or a newspaper) and store it in a glass jar or container in the least cold part of the refrigerator. Do not remove soil from the truffle before wrapping. The paper should be changed daily, and the jar must be kept dry. Do not place the truffles in rice, as this will dry them out. Truffles have a very strong aroma, which will quickly impregnate any other foods in the fridge. It's important to store them in their own container unless you want to make a truffle butter or a truffle omelet, in which case place butter and eggs (shell-on) in the same container.
  • Right before use, the truffles should be carefully cleaned using a soft brush. This will eliminate any soil particles still present on the skin or in the cavities of the tuber. There is no need to remove the skin, since it is perfectly edible.
