In 1960, a family owned butcher shop in La Rioja, Spain started curing Spanish-style sausages. Knowing that there was a market for this authentic chorizo in the US, Palacios was founded in 1983, with the hope of forever transforming the American palate for spicy and sweet Spanish sausages.
