After years of working as a ranch hand and researching Agricultural Economics at UC Berkeley, Kathy Eckhouse joined forces with her husband Herb, an amateur charcutier who was inspired by a trip to Parma, Italy. Together, the couple created La Quercia, providing premium American prosciutto to top chefs nationwide.

California Spicing

Herb Eckhouse may have studied under traditional prosciutto masters in Italy, but he certainly doesn't shy away from putting a contemporary update on his cured meats. The prosciutto piccante, for instance, is homage to the American love for strong flavors. The spice blend of freshly ground fennel and red chili flakes is rubbed into the meat by hand, penetrating about 1/8” of the flesh. When sliced, the spices are pulled across the surface, resulting in a product that balances the sweetness of cured meat with a slow, flavorful heat. “My wife Kathy calls it California spicing,” laughs Eckhouse. “It's a fun prosciutto to eat, and it has great contrast with strong cheeses.” You may not see this prosciutto in Parma any time soon, but this is one that we are proud to claim for ourselves.
