Both native Parisians and highly acclaimed pastry chefs, Florian Bellanger and Ludovic Augendre have been perfecting their artistic craft since before they were kids. Florian and Ludovic founded Mad Mac in 2006, sourcing the highest quality ingredients for their preservative free macarons.

Why We Love It

The very first version of these magical cakes was made just before the French Revolution at a convent in Bordeaux by nuns determined to turn egg yolks, donated to them by local winemakers who needed only the whites to clarify their wines, into delicious cakes. Ludo Augendre, a Bordeaux native, crafts Mad Mac’s canelés using the same recipe and methods he learned from his grandmother over 20 years ago in France. Like Ludo, we believe some of the best recipes come from Grandma’s repertoire.

  • These canelé will remain fresh up to four days in the refrigerator and up to five months in the freezer
  • If frozen, allow canelé to sit at room temperature for thirty minutes before serving
