From a wood-powered rural Oregon farm to the Vegas strip, 34-year-old Zachary Golper has baked his way across the country (plus a stint in Provence) honing his craft as a baker. In July 2011, he and his wife, Kate Wheatcroft, opened their own bakery, Bien Cuit, in Brooklyn, focusing on “well-done” French-American breads and pastries.

Straight from the Farm
Zachary Golper first learned how to bake from an organic farmer outside his hometown of Portland, Oregon. He’d wake up at one in the morning, mixing dough by hand and candlelight, without modern conveniences like yeast and electricity. Golper honors that experience at Bien Cuit by sourcing many of his ingredients direct from local producers in upstate New York. Traditional bacon used for the bakery’s quiches come from Willow Brook Farm upstate, while less traditional lamb bacon, which dresses a pizza with eggplant and tarragon oil, is made on Lynn Mordas’s Dashing Star Farm in Dutchess County.
