Grown in the extreme highlands of the Andes, where few grains are hardy enough to survive, kañiwa is an ancient species of the flowering goosefoot plant, and is similar to quinoa–yet smaller. Zócalo mills this 100-percent organic seed with the distinctly earthy flavor to create a flour that’s naturally gluten-free.
